Chocolate peanut butter cup overload cake

This year is my mother's 50th birthday and it has come to be that I make everyone's birthday dessert (we no longer have just cakes on our birthdays). My mom found this cake recipe online, printed the recipe, and has not been able to find it since. My son is 9 years old which means I have been partially blind for almost 10 years. I am juvenile diabetic and the pregnancy with my son was very hard on my body, especially my eyes. I've had many eye surguries. Because of my eye problems, I had to go on disability, which doesn't pay much. My boyfriend is going to graduate college in May of this year. He attends school and work full-time. However, like many Americans, we live paycheck to paycheck. This is why we can't afford to buy my mom a nice gift. So, I'm making her b'day dinner and this delish cake

Ingredients

  1. 1for cake batter
  2. 2 1/2 cupPlus 1 TBS all-purpose flour
  3. 1 cupPlus 1 TBS Dutch processed cocoa powder (I couldn't find any so I used regular cocoa powder)
  4. 3 cupgranulated sugar
  5. 1 1/2 tspsalt
  6. 1 1/2 tspbaking powder
  7. 1 tbspbaking soda
  8. 3 eacheggs
  9. 4 1/2 tspvanilla extract
  10. 1 1/2 cupbuttermilk
  11. 3/4 cupvegetable oil
  12. 1 1/2 cupstrong hot black coffee
  13. 30 piecemini peanut butter cups
  14. 1for peanut butter icing
  15. 2 cuppowdered sugar
  16. 10 tbspunsalted butter, softened
  17. 1/2 tspsalt
  18. 2 cupcreamy peanut butter
  19. 1 1/2 tspvanilla extract
  20. 2/3 cupheavy cream
  21. 1for chocolate ganache
  22. 8 ozsemi-sweet chocolate chips
  23. 3/4 cupheavy cream

    For cakes- Heat oven to 350˚. Line the bottom of 3 8" cake pans with parchment paper, while greasing and flooring the sides.

    In a large bowl, sift together ALL the dry ingredients. In another bowl, whisk together buttermilk, eggs, coffee, oil, and vanilla. Add wet to dry and mix for 2 minutes and 20 seconds on medium speed (will be thin).

    Divide into the 3 prepared cake pans. Bake for 20 minutes. Rotate each cake pan and bake 12 more minutes or until a toothpick comes out clean. Cool cakes in the pan on wire rack for 20 minutes, remove from pans, and cool rest of the way.

    After cakes are completely cooled, begin making peanut butter icing. Peanut butter icing- Beat powdered sugar, peanut butter, butter, vanilla, and salt on low speed until creamy. Beat in heavy cream, on high, until light and smooth.

    To layer cakes to make a whole, do 1 cake, 1 cup peanut butter icing, 10 chopped mini peanut butter cups, 1 cake, 1 cup peanut butter icing, 10 more chopped peanut butter cups, last cake, last of peanut butter icing, ganache, and last 10 chopped peanut butter cups.

    Chocolate ganache- Place semi-sweet chocolate chips in a small mixing bowl. In a small saucepan, warm heavy cream just until at a boil. Pour cream over chocolate and let sit for 2 minutes. Whisk until smooth, and let sit until thickened some, and then pour over cake. Finally top with last 10 chopped mini peanut butter cups. ENJOY!

In the last 4 years, I have become what I believe is a hobby chef. I absolutely love food and cooking! Everyone in my family (except my son (and even him sometimes) loves the things I make (at least most of the things). To be honest, most of the food I make are other people's recipes that I have tweaked a little bit to fit my family's likings. Although I am a disabled stay at home mom of 1 nine year old 3rd grade boy, I stay very busy and always moving. Sometimes (ok most of the time) my cooking leaves quite a mess. I like to create a new recipe with multiple other recipes. My favorite one would have to be my raspberry Margarita chicken salad. I love margaritas, especially the frozen raspberry Margarita from Chili's. I thought a Margarita marinated chicken salad would taste great with a homemade raspberry vinaigrette and I was right! I plan on posting the recipe with the sites I got the recipes from soon. I really look forward to finding and posting great recipes and getting to know everyone. Happy cooking!
