Adding lots of vegetables to fried rice can make it a nice fun dish to eat. Enjoy!
Steps

Wash and chop all your vegetables and bacon.

Then stir fry your ginger and onions till golden brown

Add your carrots, capsicum and bacon then continue to stir fry.

Add the rice and stir while mixing with the ingredients. Also add salt and Soy sauce to taste.

The coriander and chopped lettuce then stir.

Lastly add mayonnaise and mix well.

Serve when hot
