A nice, sweet topping for gateaux, ice cream and cheesecakes

Ingredients

  1. 750 gramspitted cherries
  2. 3 tbspbrandy
  3. 60 gramsgranulated sugar
  4. 120 mlapple juice
  5. 2 tsparrowroot or corn starch
  6. 2 tbspwater

Cooking Instructions

  1. 1

    Put the cherries in a saucepan with the brandy, sugar and apple juice

  2. 2

    Heat gently until the sugar dissolves then bring to the boil and let simmer gently for 5 minutes

  3. 3

    Mix the arrowroot powder with the water

  4. 4

    Pour into the pan and stir until thickened

  5. 5

    Cool and chill before serving

  6. 6

    Great with vanilla ice cream or with whipped cream and brandy baskets
