Authentic Mofongo with avocado and mayo ketchup

Mofongo is a great side dish. You can fill it up with seafood , meat or veggies. In this recipe I did a veggie one.

Mofongo is a great side dish. You can fill it up with seafood , meat or veggies. In this recipe I did a veggie one.
Cooking Instructions

Peel your plantains and cut them into 1 inch pieces.

Fry them on medium heat till they are cooked through and yellow.

In your mortar add the garlic, salt pepper and olive oil. Start mashing all those ingredients together.

Gradually start mashing the fried plantains with the mixture inside the mortar.

Mash all the fried plantains and set it aside. Your mofongo is done!

Now squeeze some ketchup and mayonnaise together to create a pink sauce. Cut open your avocado and add it on top of your served mofongo and drizzle the pink sauce on top. Enjoy :)

I would like to mention that the measurements are just examples for a typical taste, but you can really use the amount you desire depending on how you want it to taste. The same goes with the addition of garlic and lemon juice. You dont have to add it, but some people like the acidic flavor so they add it to the mix. You can add more or less. You can add garlic paste and not lemon. I dont add lemon juice myself and I add more garlic paste if I feel like having a acidic dip. It is really up to you. You can even make this an individual recipe. Instead of cups use tablespoons. One tablespoon of mayonaise and about 3/4 of ketchup and 1/2 teaspoon of garlic paste and you can have it for yourself. You can put the mayonaise and ketchup on the table and have people serve and prepare their own amount for their salads. bestcoqui -
