This is one of my favorite Bahamian Dishes! Hope you enjoy it as much as I do :)

Ingredients

  1. 3 lbchicken thighs diced up in chunks or Chicken wings
  2. 1 2/3curry powder
  3. 1 cupchopped onion
  4. 1 1/4 clovegarlic
  5. 1Chopped Idaho potato an fresh carrots
  6. 1 cupChopped green pepper
  7. 1 1/3thyme or all spice seeds
  8. 1 tspsalt
  9. 1Ghoat Pepper

Cooking Instructions

  1. 1

    Clean and season chicken lightly add all the ingredients listed above in one pot except for the potatoes and carrots.

    After you have placed all the ingredients together you can begin to stir everything together with a cooking spoon including the curry powder (make sure the curry powder is evenly distributed on every portion of the chicken)

    You can now turn the stove on Medium and cover the pot so the steam can stay in.

  4. 4

    After 15 minutes has passed you can continue stirring the pot. Because the steam has be trapped in the pot you may or may or may not need to add water. Cover the pot for another 15 or 20 minutes.

    You can now add your potatoes and carrots. Cook until the gravy begins to thicken up a little. This dish can be served with long grained white rice and sweetened corn out of the can.
