Pork & noodle broth with shrimp
This is a soup that I find peace in cooking.
Cooking Instructions

Boil salted water then cook noodles according to directions. Then drain and refresh in cold water.

Heat wok and add both oils. Once hot, add shallots and stir fry for 3 minutes. Once browned remove from wok and set aside.

Add ginger, garlic, sugar, and stock and bring to a simmer . Add lime leaves, fish sauce and lime juice. Add the pork, then lower the heat, and simmer for 15 more minutes.

Add the shrimp and the noodles and simmer for another 3 minutes or until the shrimp are cooked through.

Serve using the cilantro and scallions as garnish.

It's been 4 years since I started making homemade ramen as a hobby. Recently, I've finally been able to come close to my ideal flavors, so I uploaded the recipe here as a note to myself.The noodles here are low in moisture and very hard. I think they would be very hard to roll out without a pasta machine or noodle-making machine. If you are going to roll them out by hand, add 100 to 200 g of water to the amounts given.
