Steps

Cut meat and onions into cubes. Chop all other veggies as desired.

Stir fry meat and onions in olive oil until onions are light brown (about 3 tbsp olive oil).

Add all other veggies except cauliflower and peas.

Add 3.5 cups of water and 1.5 packages of curry mix (about 2.5 cups per package) Stir until paste is melted.

Simmer for 20 minutes, stirring constantly. Add cauliflower at last 10 minutes. Add peas at the very end.

Delicious served over rice!
