Ingredients

6 servings
  • 2to 4 tablespoons olive oil
  • 1 mediumonion, chopped
  • 3 clovegarlic, minced
  • 1 mediumgreen bell pepper, cored and chopped
  • 2 tbspchopped parsley
  • 1bay leaf
  • 1 can(28 ounces) tomato puree
  • 2to 3 jars (2 ounces each) chopped pimiento, drained
  • 1to 1 1/2 teaspoons salt
  • 1 tspsoy sauce (optional )
  • 1/2to 1 teaspoon pepper
  • 1 tbspvinegar
  • 1/2 cupdry white wine
  • 1 tspWorcestershire sauce
  • 3to 4 cups prepared brown or white rice
  • 2 lbpeeled and cooked large shrimp

Steps

  1. 1

    In a large sauté pan, heat oil over medium heat.

  2. 2

    When oil is hot, add onion, bell pepper, garlic and pimiento and sauté until onion is translucent.

  3. 3

    Add all remaining ingredients except shrimp and rice and simmer about 2 hours, stirring regularly.

  4. 4

    When ready, add shrimp and heat just through.

  5. 5

    Remove bay leaf.

  6. 6

    Serve over rice.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
