Add rice, coconut milk,water and salt in saucepan and bring to boil. Cover with lid and simmer over med-low heat until liquid is absorbed, about 15 minutes.

When rice is done, fluff with fork and stir in lime zest.

This is great served with Spicy Coconut Shrimp or Chili-Rubbed Pan Roasted Chicken

NOTE: I purchase canned coconut milk. If you've never used it before, the fat separates from the water in the can. Stir or whisk the fat and water together to combine before measuring for your rice.
