Ingredients

  • 3 lbYukon potatoes; quartered or bite sized pieces
  • 5jalapenos; small dice
  • 1 cuppepper jack cheese; small dice
  • 1 headgarlic; peeled
  • 1red bell pepper; small dice
  • 1 bunchcilantro; chopped
  • 1 1/2 stickbutter; melted
  • 1 largepinch of salt and pepper

  1. 1

    Cover potatoes and garlic with cold water. Add salt. Boil until potatoes are easily pierced with a paring knife. Drain.

  2. 2

    Place all ingredients in a large mixing bowl and toss. Add melted butter. Toss. Season. Toss.
