I Had a whole lot of summer fruit in the fridge and decided to throw this together so that they wouldn't be wasted. We had a family barbecue and the bowl had been licked clean.

Ingredients

  1. 1 1/2 cupcubed watermelon
  2. 1/2cucumber
  3. 1/4 cupdrained chickpeas
  4. 1/2 headlettuce
  5. 1crumbled feta cheese
  6. 1 packagesstrawberries
  7. 1/4 cupavocado pulsed smooth
  8. 2 tbsphoney
  9. 6 tbspyoghurt
  10. 1 tspolive oil
  11. 1ground peppercorn
  12. 1 tbsplemon juice
  13. 1 pinchsalt
  14. 1 tbspmayonnaise
  15. 1sesame seeds for sprinkling
  16. 1handful of raspberries

    Remove all seeds from watermelon. And cube to bite sized pieces

    Slice cucumber into strips lengthwise

  3. 3

    Remove strawberry stems and half the strawberries lengthwise

  4. 4

    Ensure that the chickpeas are properly drained.

    Tear lettuce into medium sized pieces

  6. 6

    Layer lettuce down first. Add chickpeas onto lettuce and then place cucumber slices on top. Throw on the watermelon chunks, whole raspberries and strawberry halves.

    For the dressing : mix olive oil, honey,mayonnaise and yoghurt together. Add salt, pepper and lemon juice. Mix till well blended

    To serve: drizzle avocado onto salad, pour salad on the dressing and sprinkle crumbled feta and sesame seeds onto the top.
