Ingredients

  1. 1English muffin toasted
  2. 1egg scrambled
  3. 1 slicemozzarella cheese
  4. 1handful parsley
  5. 1/2avocado
  6. 1juice from 1/2 lime

Steps

  1. 1

    Mash avocado with lime juice and set aside (or you can use your fave guacamole)

  2. 2

    Cook egg in pan and top with cheese to keep the egg together

  3. 3

    Lay some parsley on the bottom bun, top with egg then top with avocado mixture.. enjoy
