Ingredients

4 servings
  1. 30 mlwhite wine
  2. 50 mlolive oil
  3. 1 pinchsalt
  4. 1 dashpiri-piri sauce
  5. 1 bunchfresh coriander ( I use a large handful but its entirely up to you)
  6. 1 kgclams
  7. 4 clamsgarlic, chopped

    I would advise to soak the calms 3-4 hours in cold water to get rid of any sand left in them and change the water once or twice.

  2. 2

    Place a medium sized pan on a medium heat and add the oil

  3. 3

    Add the garlic and cook for about 5 minutes or until brown.

  4. 4

    Add the calms, wine, piri-piri and salt and cook for 5-10 minutes.

  5. 5

    Chop the coriander and just before turning the heat off add to the pan and mix it all together.

  6. 6

    Serve with some warm toast.
