Ingredients

  1. 1 lbboneless skinless chicken breasts, cut into 1/4 inche slices
  2. 1egg, beaten with 1 tablespoon water
  3. 1/2 cupall-purpose flour
  4. 2 tbspgrated parmesan cheese
  5. 1 tspcajun seasoning
  6. 1/2 tspblack pepper
  7. 1/4 tspsalt
  8. 1 tbspunsalted butter
  9. 1 tspolive oil
  10. 1/4 cupdry white wine
  11. 1/2 cuplow sodium chcken broth
  12. 2 tbspfresh lemon juice
  13. 1/4 cupcream, heavy, light or half and half. I used heavy cream
  14. 1 tsphot sauce, such asgraks brand
  15. 1/4 tspblack pepper and salt taste
  16. 2 tbspchopped fresh basil
  17. 1small onion, chopped
  18. 3minced garlic cloves
  19. 1 cupfresh grape tomatos
  20. GARNISH
  21. grated parmesan cheese, for serving
  22. SUGGESTED ACCOMPANIMENT

  1. 1

    In a medium bowl whisk egg and water until.well blended

    Whisk flour, cajun seasoning, parmesan cheese, pepper and salt on a large plate.

    Place chicken slices in egg mixture.

    Shake off excess liquid and place in flour mixture to coat lightly.

    Heat oil and butter in large skillet until hot shake excesse flour off chicken and place in hot pan without crowding. Cook until golden then turn and cook otherside until golden about 3 minutes per side. Remove to a plate and make sauce in pan.

    Have vegetables ready

    Add onions and garlic to skillet and soften about 3 minutes.

    Add wine and cook until.wine is almost gone

    Add broth, hot sauce, lemon, pepper,tomatoes, cream.and basil.cook.about 5 minutes until tomatoes are soft but still.hold their shape and sauce is lightly thickened.

    Serve sauce with chicken. Garnish with parmesan cheese. Serve with Cheddar Cheese Puffs if desired. Recipe attached below

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
