Ingredients

4 servings
  • 1 1/2 lbshrimps
  • 1/2butternut pumpkin/squash
  • 1 mediumonion, sliced
  • 3 clovegarlic, minced
  • 2 cuplong beans, cut into 3 inch lenghts
  • 400 mlcoconut milk
  • 2 tbspfish sauce
  • 2pieces chili pepper

Steps

30 mins
  1. 1

    Heat oil in a large pan over medium heat. Saute onions and garlic until becomes tender.

  2. 2

    Add squash and long beans. Cover and cook for 5 minutes Add coconut milk, chili pepper and fish sauce. Cook in a low heat, cover and let it boil for a few minutes.

  3. 3

    Add shrimps. Simmer for 15 minutes until the vegetables are cooked. Season with salt and pepper.

    Serve hot with steamed rice. Serve, share and enjoy!

delicious! I used zucchini instead instead of squash because that's what I had... came out great!
