Ingredients

  1. meatloaf
  2. 3/4 lblean ground beef
  3. 3/4 lblean ground pork
  4. 1/2 cupgrated parmesian cheese
  5. 1/2 cupshredded mozzarella cheese
  6. 1/2 cupshredded provolone cheese
  7. 1 cupday old italian bread,cut into small cubes
  8. 1/4 cupmilk
  9. 1egg, beaten
  10. 2 tbspfresh parsley flakes
  11. 5 clovegarlic, minced
  12. 1 tbspbrown mustard
  13. 1 tspsalt and pepper
  14. 2 tbsptomato paste
  15. 1 tbspolive oil

Cooking Instructions

    Preheat oven to 425°F.

    In a bowl soak bread with milk. Let sit 5 minutes.

    In same bowl combine all other ingredients except for tomato paste and oil. Mix well

  4. 4

    On a parchment paper lined roasting pan, form six individual meatloaves.

    Cook meatloaves for 15 minutes.

  6. 6

    Mix tomato paste and oil in small bowl. Remove meatloaves and brush with paste mixture.

  7. 7

    Place meatloaves back in oven andcook an additional 25 minutes.

  8. 8

    Make sure the mini loaves you make are of the same size to ensure even cooking of each.
