Ingredients

  1. 2chicken breasts
  2. 2 cupof flour salt and peppered
  3. 2 cupof Panko bread crumbs
  4. 4 largeeggs beaten with 2 tbls of water
  5. 1 cupof olive oil
  6. 1tomato sauce of choice
  7. 1/4 cupof fresh grated parmesan cheese
  8. 1 lbof fresh mozzerella cheese
  9. 1fresh basil or thyme for garnish

  1. 1

    Pound chicken breast to double size of breast and season both sides with salt and pepper

  2. 2

    Pre heat oven to 400°F

  3. 3

    beat 4 eggs and 2 tbls of water together add salt and pepper and leave in a container to dredge chicken breast

  4. 4

    in 2 separate containers add salt and peppered flour to one and panko in the other

  5. 5

    Choose a fry pan that can hold at least 2 breasts at a time,pour olive oil in pan and set to medium high heat

  6. 6

    Cut chicken breast in half the short way and dredge in flour, then egg, then panko

  7. 7

    Add chicken to smoking hot oil and fry each side for 3 mins each side

  8. 8

    place on a cooking sheet and put in oven to finish cooking for 5 -7 minutes

  9. 9

    Melt slices of mozzarella cheese and add sauce to desire.

  10. 10

    Add basil or thyme for garnish
