Ingredients

  1. rub for chicken
  2. 15-6 pound whole fresh chcken
  3. 2/3 cupvegetable oil
  4. 1/2 tbspeach of smoked spanish style paprika, granulated onion
  5. 1/2 tspfresh chopped cilantro
  6. 1 tspeach of granulated garlic, ground cumin seed, salt
  7. 1/8 tspground chipotle
  8. 1/2 largewhite onion
  9. 1 cupcilantro, fresh

Cooking Instructions

    Heat oven to 350°F.

  2. 2

    Wash chicken under cool running water then pat dry. In a bowl, mix oil and spices with small amount of cilantro. This is your rub.

    Take onion and large amount of cilantro and stuff inside chicken cavity.

  4. 4

    Take your fingers and lift skin off breast meat making a pocket.

  5. 5

    With a spoon, pour 1/4 of rub into each pocket made.

  6. 6

    Rub rest of chicken on the outside with rub.

  7. 7

    Roast at 350 for 20 minutes per pound. Chicken juices should run clear when fully cooked.

    Rest chicken for 15 minutes before carving.
