I was looking for a simple chicken and dumplings recipe but none of them satisfied me because they didn't have very many vegetables. So I had a few different recipes i kinda liked and through this one together and it came out amazing. The hubby ate 2 bowls last night, and even my 10 month old loved it!!

Ingredients

  1. 4 piecechicken leg meat ( i deboned befor cooking) can use chicken breast if desired!
  2. 1 cancorn
  3. 1 cangreen beans
  4. 1 canrotel (tomato's and chilies)
  5. 1 cansweet peas and carrots mix
  6. 1/2 cupfresh mushrooms
  7. 1 canchicken broth
  8. 2 cancream of chicken soup
  9. 1/2 cupwater
  10. 1salt and pepper
  11. 1onion chopped
  12. 1 tbspminced garlic
  13. 2rolls of bicuit doe

Cooking Instructions

    Add chicken, chopped onions, minced garlic, and chicken broth to crockpot. Cook on high for an hour.

    Add in and stir all other ingredients except the biscuits, and cook on low for 4 hours. (Leaving the chicken on the bottom)

    With a fork or tongs shred chicken into desired sized chunks, and cook on low for 30 minutes.

    Cut the biscuits into quarters and add to the crock pot. It helps if you make sure to dunk all the balls of dough under the liquid. Then continue to cook for 45 minutes to an hour.

    Serve and enjoy! PS you're going to love that your kids are excited to eat all their veggies because they taste amazing!
