  1. 5 mediumCarrots
  2. 4 mediumPotatoes
  3. 2 mediumOnion, diced
  4. 2 tbspButter
  5. 1 tbspGinger, grated
  6. 1 tbspGarlic, chopped
  7. 3 tbspMiso
  8. 1Broth
  9. 1/2 bunchParsley, chopped
  10. 2 mediumZucchini
  11. 1 cupSake
  12. 1Soy Sauce

Steps

40 mins
  1. 1

    Peel carrots and roll cut. Peel potatoes and dice.

  2. 2

    Sweat onion in butter until tender.

  3. 3

    Add garlic and ginger and toast briefly.

  4. 4

    Add miso and stir over heat until miso darkens slightly and sticks to the pan.

  5. 5

    Deglaze with sake.

  6. 6

    Stir in enough broth to dissolve the miso.

  7. 7

    Add carrot and potato and place over low heat.

  8. 8

    Cover and cook until tender, stirring often, and adding broth as needed.

  9. 9

    Season with soy sauce.

  10. 10

    Stir in parsley.
