Cooking Instructions

Pe heat oven to 350. Saute onions until tender.

Add chicken and green chilies. Saute till chicken is cooked

Pour black beans in pot but don't stir in. Your getting your ingredients ready to make your enchiladas.

Grease bottom of baking dish. Then start the process. Warmed tortilla, sauce, chicken, beans, cheese and roll it up and place seam down .

Pour the rest of enchilada sauce on top and add more cheese . Should look something like this. Bake uncovered for about 20 minutes.

This is a super forgiving recipe. Add more of what you like and don't add what you don't like! It is also very heavy. When topped with sour cream and avacado, and made with the listed ingredients, one enchilada is roughly 720 calories. Substitute chicken for cooked beef, or more cheese (if you don't want meat).
