In a large pitcher or punch bowl, combine the apple cider, rum and lemon juice. Chill for up to 12 hours. Serve over ice and garnish with the apple.

I absolutely got the inspiration for this from the BBQ Pit Boys. I used a mix of their recipe and my smoked chicken recipe for filling the cavity and brine. I can't wait until warmer weather so a can try out a spatchcock version of this on the smoker! Run Golden Delicious or Granny Smith apple peels, cores, quartered, blemished and dropped apples in three pound batches through the tabletop press. Three lbs. of apples make a pint of juice. A low alcohol version of the traditional margarita, using sparkling apple cider as the alcohol carrier for the drink, with lime and 2 Tbs Tequila or Mescal and Cointreau per tall glass for flavor. My friend Jane tasted this in West Virginia and recommended I make this summer drink with my home made apple cider. Thank you, Jane.
