Chop onion into strips or large chunks

Chop bell pepper into large chunks

Pour pineapple juice into crockpot add pineapple rings if desired

Add peppers and onions

Generously apply rub to all sides of pork and place into slow cooker

Cut potatoes in halves and position around pork

Cook on High for 6 hours
