Cooking Instructions

Arrange pita triangles on a large plate.
- 2
Mix next five ingredients well. I do this the night before so the veggie mix softens.
- 3
Spread each triangle with cream cheese spinach mix and poke pretzel stick in wider end of pita.
- 4
Decorate with chopped tomato.

This is a small batch recipe for 3 medium pita breads. The secret to getting them to puff up into pockets is a super hot oven (at least 260°C/500°F).
