Moi moi

Moi moi is a classic meal that can be eaten with anything ranging from rice to garri or eaten alone. It is very easy to make and can be made using different techniques.
Moi moi can be filled with anything available. If you are using fish then debone and shred it into little pieces. If you intend to use eggs, boil and slice the eggs into equal halves or even slices. Corned beef, sardines, bone marrow, shredded chicken, beef and vegetables can also be added to the moi moi. Moi moi can either be prepared with beans purée or beans flour, for this recipe I used beans purée

If you are using beans purée then pick the beans to remove all the dirt and stones and soak it in water to enable the skin to become soft and remove easily.

To remove the skin easily, rub the beans between your fingers to get rid of the skin and only white beans is left.

Sieve the beans repeatedly to get rid of all the skin.

Soak the beans for 3-5 hours to enable it to blend easily.

Combine the beans with the washed and chopped red peppers, onion and a cup water and blend until a smooth and thick paste is achieved.

Pour the blended beans paste into a large bowl.

Add the seasoning, crayfish, one egg (optional), vegetable oil, palm oil (optional), chopped onions (optional) and salt.

Mix thoroughly.

You can use Uma (moi moi leaves) or Aluminum foil to cook the moi moi. Cooking in plastic or nylon is not advisable.

Add water to a pot about quarter way filled up.

Allow it to come to a boil.

If you are using an aluminum foil container then oil the container before pouring the mixture in

Add the filling of your choice to it. (I used boiled eggs)

Cover it tightly with foil and place it in the pot.

Cook the moimoi for 30-45 minutes or until when it is fully done.

Use a fork or tooth pick to check if it is done.
