Ingredients

  1. 1 kgchicken gizzards
  2. 60 mlolive oil, extra virgin
  3. 1 largeonion, chopped
  4. 3garlic cloves, chopped
  5. 2bay leaves
  6. bunchchopped parsley
  7. Chili peppers, Add depending on your spicy preferences
  8. 1/2 tspground ginger
  9. 1 1/2 tbsptomato paste
  10. 1/2 tsppaprika
  11. 1/2yellow bell pepper, chopped
  12. 1chicken stock cube
  13. 100 mlwhite wine
  14. salt
  15. ground black pepper
  16. 100 mlboiling water

Steps

    Add the olive oil to a saucepan and bring to a medium heat.

  2. 2

    Then add the onion, garlic and bay leaves to the pan and fry for 5-7 minutes. Stir often.

    Next add the chopped chili's, ginger and parsley and stir.

    After 1-2 minutes add the gizzards, paprika and tomato paste. Stir well again.

    Seal with the saucepan with the lid and simmer for 5 minutes. Stir regularly.

    Then add the bell pepper and chicken stock cube.

  7. 7

    Reduce heat, then continue to simmer for a further 10 minutes.

  8. 8

    Add the wine and stir well. Replace the lid and simmer until the liquid has thickened. About 20-25 minutes. Stir occasionally.

    Add more olive oil if necessary. Season with salt and pepper.

    Add the water and continue to cook for a further 15-20 minutes. The gizzards do take a long time to cook.

    Check seasoning is okay. Let it rest for 10-15 minutes prior to serving.

Mmm.. I just love chicken gizzards & chicken hearts I have a chicken hearts & gravy recipe I also do with chicken gizzards... I can't wait to try your chicken gizzards stew : )
