Ingredients

  1. 2 tbspolive oil, extra virgin
  2. 1 lblocal butcher shop quality chorizo
  3. 1onion, chopped
  4. 2 stickcelery, diced
  5. 2carrot, diced
  6. 2colored bell peppers, chopped
  7. salt and pepper
  8. tspground cumin
  9. 1 tspminced garlic
  10. 1 tspred chili flakes(optional)
  11. 2jalapeños, seeded and minced(optional)
  12. 1/2 bunchcilantro, minced
  13. 8 ozmushrooms
  14. 6 cupcornbread crumbs
  15. 4 cupbread crumbs
  16. 4eggs
  17. 4 cupchicken broth

Steps

  1. 1

    Heat oil and add chorizo. Cook until done.

  2. 2

    Add onion, celery and carrots. Cook until soft.

  3. 3

    Add peppers and mushrooms with seasonings. Cook 2 minutes and remove from heat.

  4. 4

    Put cooked ingredients into a mixing bowl and stir in egg.

    Add bread crumbs and broth. Stir and pour into a oiled or buttered 9 by 13 baking pan.

    Bake in a 350° F oven for 45 to Minutes until slightly crispy on top.
