This is adelicious light frosting for cakes, cupcakes and brownies. Also great to top ice cream, puddings, pies and drinks. It is a great dip for fresh fruit as well. The cocoa powder provides a stabalizing effect so it remains fluffy for a day.

Ingredients

  1. 1 1/4 cupheavy whipping cream
  2. 3 tbspunsweetened cocoa powder
  3. 1/4 cupconfectioners sugar
  4. 1/2 tspvanilla extract

Cooking Instructions

    Have cream and bowl you are whipping it in chilled.

    Stift cocoa and confectioners together. Set aside. This step is important for a smooth whipped cream.

    Whip cream until soft peaks form, add sifted cocoa/sugar gradually, add vanilla and beat until soft stiff peaks. Keep chilled.

    Use for your cakes, cupcakes, brownies,puddings a a frosting. Use as a dip for fresh fruit. Top drinks and ice cream!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

I found if u add melted chocolate chips it remains stable instead of cocoa powder.
