Cooking Instructions

In a medium pot, add oil, tomato sauce, alcaparrado, sofrito and Sazón.

Cook 4 minutes then add the rest of the ingredients.

Bring to a boil & cook on high until most of the water is absorbed.

Once the water is absorbed, stir gently from bottom to top only once or twice.

Cover, turn heat to low and cook 30 minutes or until rice is tender.

My mother in law is Panamañian & taught me this dish. It is one of the more traditional dishes made in Panama. I have learned the simpler version. They use real coconut & fresh beans. My husband & son love this dish. I'm glad that I can bring my husbands dishes to our kitchen.

Theres a woman run latino restaurant near me thats run by woman. Im sorry, but the latino ladies always seem to make the best food. Needless to say, they make an incredible Arroz con Pollo, and I asked for the recipe. They wouldnt give me everything, nor would they give me the amounts, so I did my best.
