Put medium-large sized pot on stove on high-medium heat and put oil to a bit of a sizzle

Add rice (a tiny bit more oil on top), add bay leaves, sliced chorizo, sofrito, Adobo, garlic, Sazon, mojo, olive juice and olives. Mix well and let sizzle for 2-3 mins. Stir often so rice doesnt stick to pot.

Add gandules (put liquid from can in rice too) and water. Mix well. Bring to roaring boil then reduce heat to medium-low heat, cover for about 20-25 min or until soft. Do not stir rice until after the 25 minutes and keep covered. After the 25 mins uncover and mix around, then cover again and let steam for 5-10 more mins. Now rice should be done and fluffy.
