Pickle Potato Salad

I always seem to be cooking potatoes in their skins these days, as I find it easier to peel them when they're warm, and they keep more of their goodness and flavour. That's what I've done in this recipe, too, although if I were using small 'new' potatoes, I'd keep the skins on.

Ingredients

  1. 5medium-sized potatoes, boiled in their skins, peeled while warm, cooled and diced
  2. 4 mediumpickles, diced small
  3. 1/2 cupmayonnaise
  4. 2 tbspsoured cream
  5. 1 tbsphorseradish sauce

Cooking Instructions

  1. 1

    Mix everything together in a medium bowl, and chill until ready to eat. I don't think it needs seasoning, but you might do...taste it and check :-)
