Ingredients

  1. 1 kgsmall-medium potatoes
  2. 150 gradish
  3. 70 gred onion
  4. 60 gspring onion
  5. 50 garugula
  6. 100 gpickles + 1tbsp pickle juice
  7. Mayo
  8. 100 gsoy yogurt
  9. 50 gcoconut yogurt
  10. 10 gdijon mustard
  11. 2-3 tsplemon juice
  12. Spices
  13. 1/2-3/4 tspsalt
  14. Pepper
  15. Garlic powder

Cooking Instructions

  1. 1

    Wash potatoes, cook in salted water until soft (20-30min)

  2. 2

    Drain and soak in cold water until cool

  3. 3

    Peel potatoes and chop into 1/2-1cm thick pieces

  4. 4

    Separately combine mayo ingredients and spices

  5. 5

    Chop radish into thin circles, red onion into long strings, finely chop spring onion & pickles

  6. 6

    Add veggies & mayo to potatoes, combine

  7. 7

    Refrigerate and let cool
