Ingredients

4 servings
  1. 6 tbspcrumbled feta cheese
  2. 2 tspof sherry vinegar or red wine vinegar
  3. 1 pinchsalt
  4. 1 pinchpepper
  5. 1/3 cuploosely packed fresh flat leaf parsley
  6. 1/2 cupgrape tomatoes, quartered
  7. 2 can(15.5 ounces each) black eyed peas, drained
  8. 1/8to 1/4 teaspoon crushed red pepper flakes (optional)

Cooking Instructions

  1. 1

    Combine all of the ingredients in a serving bowl.

    Toss well.

  3. 3

    Let stand 10 minutes before serving.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
