This dish also works really well if you substitute the pasta for a jacket potato! I hope you all enjoy.

Ingredients

  1. 450 gramschicken
  2. 100 gramsbroccoli (cooked and drained)
  3. 150 gramscherry tomatoes, halved
  4. 400 mlchicken stock
  5. 1 tspgarlic puree
  6. 1 tspdried basil
  7. 1 tspmixed herbs
  8. 2 tbspcorn flour
  9. 40 gramsgrated parmesan
  10. 1drained can sweetcorn (optional)
  11. 1enough cooked pasta for 4

Cooking Instructions

    Cook your pasta, drain, and set to one side.

  2. 2

    Dice your chicken and cook through in a frying pan. Once cooked, add your stock, garlic puree and herbs to the pan. Stir.

    Add your vegetables and cook for 3 minutes.

  4. 4

    In a separate small bowl, mix some of the liquid from the pan to the corn flour until you have a thick but pourable consistency.

    Add your corn flour to the pan and stir it through. Cook for 2 minutes.

    Add your parmesan to the pan and stir. Cook for two minutes.

  7. 7

    If you wish and have a large enough pan, add your pasta immediately after stirring in the parmesan. If you would prefer, serve your pasta with the sauce and vegetable mixture on top.
