Ingredients

  1. 1/2 cupsemi-sweet chocolate chips
  2. 1/2 cupraisin bran cereal
  3. 1 cupwhole wheat flour
  4. 1/4 tspsalt
  5. 1 1/2 cupoats (quick, rolled, or old fashioned)
  6. 1/2 cuppureed pumpkin
  7. 1/2 cupmaple syrup
  8. 1 tsppumpkin pie spice (apple pie spice or cinnamon will work also)
  9. 1(15 ounce) can great northern beans (low sodium preferably), drained and rinsed

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In a blender or food processor, combine the beans, syrup, salt, pumpkin pie spice, and pumpkin and blend until very smooth.

    Add the flour and pulse to combine.

  4. 4

    Add the oats and pulse to combine.

  5. 5

    Transfer to a large bowl.

  6. 6

    Add the cereal and chocolate chips and stir well.

  7. 7

    This mixture should be spreadable. If it's too dry, add 1/4 cup of water. If it's too runny, add another 1/4 cup flour.

    Grease a 9 X 13 inch pan.

    Spread the mixture in the pan.

  10. 10

    Bake for 15 to 18 minutes.

  11. 11

    Let cool before cutting into squares.

  12. 12

    You can remove these from the pan, wrap them in plastic cling wrap, and keep them in the refrigerator.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
