Having dietary restrictions can be challenging but I sure do not miss dairy.. Of course you could add what ever you want to this to suit your tastes!! This is what I want for breakfast!! It is super yummy and satisfying!

Ingredients

  1. 1Egg pan fried
  2. 1Tortilla pan fried
  3. 1Heirloom tomato sliced
  4. 1Avocado mashed
  5. 1 tbspnutrition yeast
  6. 1 tbsppesto (lemon basil garlic olive oil)
  7. 1Salt pepper miss dash to taste

Cooking Instructions

    Pan fry the tortilla till nice and browned

  2. 2

    Add olive oil to pan and egg..add a shot of water to pan and cover with lid. After one minute flip egg, cover with lid and turn off heat. Egg should be done in a minute or two, depending on how you like it.

    Layer avocado, pesto, tomato, egg and season with nutritional yeast and spices.
