I love a good tomato based soup, chili, etc. This one is by far the best one I've come across. Takes ingredients that are at the heart of most pasta sauces.

Ingredients

8 servings
  • 1 lbGround beef (grass fed is best or all natural)
  • 1small onion, diced fine
  • 1carrot, diced
  • 3celery stalks, diced
  • 2 clovegarlic, minced
  • 2 can (14.5 oz)can diced tomatoes (Italian style is best)
  • can15 oz red kidney beans (with liquid)
  • 1 can (15 oz)great northern beans (with liquid)
  • 1 can (15 oz)tomato sauce
  • 12 ozV8 original vegetable juice
  • 1 tbspwhite vinegar
  • 1 1/2 tspsalt
  • 1 tspdried oregano
  • 1 tspdried basil
  • 1/2 tsppepper
  • 1/2 tspdried thyme
  • 1 tbspolive oil, extra virgin
  • 2 tbsppancetta, diced fine (sub bacon if unavailable)
  • 1/2 boxor half pound ditali pasta or other pasta small enough for spoon use
  • 8 tbspFresh shaved parmesan (or to taste)

Steps

1 hour 15 mins
  1. 1

    In stockpot, add the oil & heat on medium

  2. 2

    Add onion & garlic and clarify for 5 minutes

  3. 3

    Add ground beef to pot and brown

  4. 4

    Add carrots and celery and simmer for 10 minutes

  5. 5

    Add the remaining ingredients except dried pasta

  6. 6

    Reduce heat and simmer uncovered for 60 minutes, stirring occasionally from the bottom

  7. 7

    After 30 minutes of simmer time, begin boiling lightly salted water to cook the pasta

  8. 8

    Cook pasta as directed on box - cooked al dente, stirring often to prevent pasta from sticking

  9. 9

    Drain pasta after cooking and add to simmering soup mixture

  10. 10

    Serve in bowls with shaved parmesan placed on top, serve with toasted rustic or garlic bread
