This time I used peri-peri chorizo instead of bacon

Fry the bacon until crispy. Set aside.

In a separate pot melt the butter. Add the flour and stir.

Add the milk a little bit and the time. Keep stirring to remove all the lumps. You can add water to make more sauce. Add flour if you need to thicken.

Cook the maccaroni.

When satisfied that you have enough sauce add about 3/4 of the grated cheese.

Mix the drained pasta, fried bacon and about 3/4 of the cheese sauce and put it into your chosen oven dish.

Cover the top of the pasta with the remainder of the white sauce and grated cheese.

Put in the oven at 200°C for about 20 minutes or until the cheese is nicely melted.
