DIM KOSHA or Bengali Egg curry with potato is a tasty and easy main course option . It is best served hot with steamed rice Roti or Paratha or Bengali like to serve with steamed rice .... #egg
Steps

Hard boil the eggs, remove shell and run a pinch of turmeric powder and salt on the surface and keep aside.

Cut the potato into medium sized wedges.

Make a masala paste of turmeric powder, chilli powder and cumin powder in 2tablespoon of water.

Heat 2 tablespoons of oil in a pan. Fry boiled eggs until they turn a light golden brown.

Add the remaining of oil and sugar. Heat until the sugar starts to caramelized and turns brown.

Turn the heat to medium. Add the bay leaf and coarsely crushed whole garam masala. Fry for 30 seconds.

Then add the onion paste, ginger and garlic paste and fry on medium heat till the onion become soft.

Add the masala paste and chopped tomatoes. Fry until the oil separate from the spices.

Add the potatoes and mix well for a minutes.

Add salt and warm water and let it come to boil. Simmer on low heat till potatoes are done.

Add the fried eggs. Cook for 3 minutes on medium heat.

Remove from the heat and garnished with coriander leaves.

Serve hot with Roti and steam Rice ☺☺
