Heat oil in a pan. add cumin seeds. when they splutter add garlic ginger paste, onions n cook. then add washed mint leaves, coriander leaves n green chillies. let it cool n make a paste. now in a big pan heat ghee. add sliced onions n green chillies. let them turn gold in colour. add mix vegetables(cubed potatoes, diced carrots, sliced capsicum, french beans) n let them cook. add bolied peas n sweet corn niblets. now add mint paste to this. add lemon juice, salt n mix well. now add cooked rice.

Mix well and serve hot wth dahi raita.

For raita.. take curd and churn it adding sugar and salt. add finely chopped onions and coriander leaves.
