Ingredients

  • Cupcake
  • 2 cupFlour
  • 1 tspSalt
  • 1 tspBaking powder
  • 2 tspBaking soda
  • 3/4 cupUnsweetened cocoa powder
  • 2 cupSugar
  • 1 cupVegetable oil
  • 1 cupHot coffee
  • 1 cupMilk
  • 2 largeeggs
  • 1 tspVanilla
  • Filling
  • 1/2 cup(1 stick) butter
  • 1/2 cupCreamy peanut butter
  • 1 cupGraham cracker crumbs
  • 1 cupPowdered sugar
  • Frosting
  • 1 cup(2 sticks) salted butter at room temperature
  • 2 tspVanilla
  • 1 cupCreamy peanut butter
  • 4 cupPowdered sugar
  • 3 tbspMilk

Steps

    Preheat oven to 325

  2. 2

    Sift together dry ingredients

  3. 3

    Add oil coffee and milk and mix at medium speed for 2 minutes

  4. 4

    Add eggs and vanilla and beat 2 more minutes

  5. 5

    Line a muffin pan with paper cupcake cups

  6. 6

    Pour batter into cups and bake in the oven for 30 minutes until firm

  7. 7

    Prepare filling

  8. 8

    Melt butter and peanut butter together in the microwave

  9. 9

    Add graham cracker crumbs and powdered sugar and mix together

  10. 10

    Refrigerate for 20-30 minutes

  11. 11

    Once cupcakes are cool, use a small paring knife to remove a hole in the center and discard the tops

  12. 12

    Roll just over a tablespoon of filling into a small ball and place into the hole

  13. 13

    Prepare frosting

    Beat butter and vanilla with an electric mixer until light and fluffy

  15. 15

    Add peanut butter and mix until combined

  16. 16

    Add powdered sugar in one cup increments

  17. 17

    Add milk and beat until mixed

    Frost filled cupcakes
