Ingredients

  1. 2 lbGround turkey, venison or hamburger
  2. 2 cloveGarlic, minced
  3. 2 tbspcanned chipolte, seeded and ground up. (save leftover in bag in freezer)
  4. 2 tbspTomato paste
  5. 1 tbspCumin
  6. 1 tbspCoriander
  7. 1 tbspPaprika
  8. 1salt and pepper to taste
  9. 1 smallred onion, finely chopped
  10. 1Green apple, finely chopped
  11. 1/2 cupApple cider
  12. 1Chicken stock, just until covered
  13. 1Couple pinches of cinnamon
  14. 1Bay leaf
  15. 1Sharp cheddar cheese

Steps

  1. 1

    Brown hamburger with garlic. Add chipotle and cook until you smell the chipotle.

  2. 2

    Add onion, apple and seasonings.

  3. 3

    Stir in tomato paste until you can smell the tomato.

  4. 4

    Add cider to de glaze the pan. Then add stock and bay. Simmer until apples are tender

  5. 5

    When serving, top with cheddar cheese
