Ingredients

  • 2 lbGround turkey, venison or hamburger
  • 2 cloveGarlic, minced
  • 2 tbspcanned chipolte, seeded and ground up. (save leftover in bag in freezer)
  • 2 tbspTomato paste
  • 1 tbspCumin
  • 1 tbspCoriander
  • 1 tbspPaprika
  • 1salt and pepper to taste
  • 1 smallred onion, finely chopped
  • 1Green apple, finely chopped
  • 1/2 cupApple cider
  • 1Chicken stock, just until covered
  • 1Couple pinches of cinnamon
  • 1Bay leaf
  • 1Sharp cheddar cheese

Steps

  1. 1

    Brown hamburger with garlic. Add chipotle and cook until you smell the chipotle.

  2. 2

    Add onion, apple and seasonings.

  3. 3

    Stir in tomato paste until you can smell the tomato.

  4. 4

    Add cider to de glaze the pan. Then add stock and bay. Simmer until apples are tender

  5. 5

    When serving, top with cheddar cheese
