Heat oil in large skillet over medium high heat. Brown chicken until no longer pink.

Stir in 1/2 cup water, rice, tomatoes and onions; bring to a boil. Cover, reduce heat to low; cook for 20 minutes. Stir in chicken and rice.

Top with cheese and remaining 2 tbsp of green onion. Cover; cook for 5 minutes more or until cheese melts and rice is tender. Serve wi TV h sour cream, if desired.
