Wash the omena in running water and soak for 5 minutes. Rinse, drain and salt.

Lightly grease the oven tray with oil, spread the omena, and drizzle 4 tbsp of cooking oil. Bake in the oven till crispy and golden at 180 degrees Celsius for 20 minutes, turning the omena midway.

Puree tomatoes and onions. In a wok add remaining oil, on medium low heat and cook the puree with the seasoning, until it thickens. Add omena.

At this point, you decide whether you like it soupy or dry. Add hot water as desired. Add salt to taste. Cook for another 2 minutes on low heat, and remove from the fire.

Serve hot with ugali and cabbage.
Tips
Add a tbsp of vinegar or the juice of 1 lemon to the soaking water to reduce the strong scent of the fish.
