1 largeonion, chopped
2 largecarrots, chopped
3celery stalks, with leaves, chopped
8 cupwater
2bay leaves
1/4 cupfresh parsley, chopped
1 tbspfine herbs
1/2 tspsalt
1pepper to taste

Combine all ingredients in a large soup pot. Bring to a boil, cover and simmer for 1 hour.

Strain, discard vegetables. Freeze if desired.
