Banana loaves are super easy to make, they are moist, fresh & a joy to eat. This loaf would be great with a cup of beverage for breakfast, this Christmas. Now let's get baking or do I say steaming?

Banana loaves are super easy to make, they are moist, fresh & a joy to eat. This loaf would be great with a cup of beverage for breakfast, this Christmas. Now let's get baking or do I say steaming?
Steps

Grease a glass bowl lightly with oil & pour water into a pot & place on medium heat to boil.

Whisk mashed bananas, milk, sugar, oil, vanilla & eggs together.

Sift in flour, baking soda & salt. Fold in raisins if using.

Pour batter into greased bowl, cover the top of the bowl with a plastic bag or foil, & place in the pot when the water boils. Ensure that the water is just reaching the bowl halfway.

Boil for 30-45minutes or until a skewer inserted into the centre of the loaf comes out clean.

Slice thinly & serve hot or cold, with a cup of hot beverage or fruit juice.
