Ingredients

  1. "dry ingredients"
  2. 7 cupsold fashioned oats
  3. 1 cupwheat bran
  4. 1 cupflax meal
  5. "flavorings"
  6. 1/4 cupcanola, coconut or olive oil
  7. 1/4 cupapplesauce
  8. 1/2 cupbrown or raw sugar
  9. 1/2 cuphoney or agave
  10. 1/2 cupwater
  11. 2 teaspoonsturmeric
  12. 1 tablespoonvanilla, maple or almond extract
  13. 2 teaspoonscinnamon
  14. 1/2 teaspoonnutmeg
  15. 1 teaspoonsalt
  16. "nuts, seeds & fruits"
  17. 1 cupbroken walnuts
  18. 1 cupbroken pecans
  19. 1/2 cupraw pumpkin seeds
  20. 1/2 cupraw sunflower seeds
  21. 1 cupchopped dates
  22. 1 cupraisins or dried cranberries

Steps

    Preheat oven to 275° F or 135° C

  2. 2

    Mix oats, bran & flax in a large roasting pan.

  3. 3

    Whisk the "flavorings" together and then drizzle over the oat mixture. Stir until evenly moist.

    Bake for 1-1/2 hours -- stirring every 15 minutes.

  5. 5

    After the third stirring, add the "nuts, seeds & fruits".

  6. 6

    Bake for an additional 15 minutes.

  7. 7

    Allow to cool completely. Store in an airtight container.

    NOTE: I have experimented with the balance and quantities of the fats and sugars. As I reduced the fat, the texture went from crunchy to chewy. I did not have success with less than 1/4 cup of fat. I have also sometimes replaced the more processed sugars with unsweetened frozen juice concentrate.
