mix all dry ingredients, flour, cornmeal, sugar, baking powder and salt. can be done at home, then packed in a plastic bag or other container.

mix in milk, egg and shortening. NOTE: if using powdered milk, adjust amount as per instructions to yield 1 cup milk. the powdered milk portion can be added to the dry section and add appropriate water during this step.

Generously grease small cast iron pan. i use Veg oil.

pour in batter unheated cast iron pan. bottom burns before cooked through, if pan was preheated. Place over heat source. flip when batter starts to pull away from walls of pan. cook a few more minutes depending on fire strength.

NOTE: cooking over fires can be difficult to control heat, use the natural hot coals that form for more controlled even heat, it may take some practice. I also had made this on my stove a couple times to get idea of what i was looking for when cooking before I attempted it outside on camp fire. Always be careful when cooking over an open fire.
