It is my one of favorite quick snacks :) It is too much healthy & easy to make.
Steps

Firstly roast sooji vermicelli if you then are not roasted.

Heat 1 teaspoon oil in kadhai or pan and roast 1.5 cup vermicelli till they turns to light golden brown, dont overcook it otherwise they will start burning and turns to black.

Now remove roasted vermicelli in a plate and again heat 1 tablespoon oil in pan.

Add sliced onion in oil and roast till they turns to golden brown.
Add all chopped vegetables in pan and cook it for 4-5 minutes or till they become soft, you can add or remove any vegetable of you choice from above mentioned vegetable list. - 5
Add cumin seeds powder and chopped tomatoes, cook everything for more 2-3 minutes.

Now add 1/2 teaspoon red chilli powder, 1/2 teaspoon turmeric powder and salt as per taste.

Add 2 cup water in it with roasted vermicelli, you can adjust the quantity of water if required.
Cook vermicelli on medium flame for more 5-7 minutes and till seviyan perfectly cooked.Switch off the flame and serve delicious healthy sooji vermicelli with the garnishing of coriander leaves.
