Ingredients

6 servings
  1. 6 ozbacon, chopped
  2. 1onion, diced
  3. 2celery stalks, diced
  4. 2 smallcarrots, diced
  5. 2zucchini, diced
  6. 1garlic clove, finely diced
  7. 1(14-ounce) can chopped tomatoes, undrained
  8. 2(15-ounce) cans Great Northern beans, drained and rinsed
  9. 3 cupreduced-sodium chicken broth
  10. 1/2 tspsalt
  11. 1Coarsely ground black pepper
  12. 6 cupfresh spinach, chopped
  13. 1/4 cupgrated Parmigiano Reggiano cheese

Steps

    Place bacon in a large suacepan over medium heat. Cook 5 minutes or until almost crisp. Add onion, celery and carrot; cook 5 minutes. Add zucchini and garlic; cook 3 minutes. Add tomatoes, beans, broth, salt and pepper. Bring to a boil, reduce heat and simmer 10 minutes. Stir in spinach. Ladle into soup bowls and top with grated cheese.
